Baked Mac and Cheese

This recipe was a stretch but it turned out amazing at the end. I was trying to use up the evaporated milk and mozzarella cheese I had at home before they go bad. Lucky me it was a delicious mac and cheese I couldn’t stop eating. It’s a little different since there is only mozzarella in it and no other cheese but hey if you like mozzarella, you’re going to love this! Plus, it’s super easy.


1 cup elbow pasta (dry)

½ cup evaporated milk

2/3 cup mozzarella cut in tiny cubes

1/8 cup of Italian breadcrumbs

2 slices of turkey bacon

Preheat your oven to 375 F

Boil some water with salt and add the dry pasta into it. Cook until tender. Be careful not to overcook it since it will keep on cooking in the oven.

While your pasta is boiling, put your bacon slices in a skillet and cook until crispy. Take them out and put them on a plate with paper towel to get rid of any excess fat. Cut them in short strips.

In a small sauce pan heat up the evaporated milk. Once it’s warm add the mozzarella cheese and continue stirring until most of the cheese is melted. Add half of the breadcrumbs, bacon strips and cooked pasta, stir over medium heat.

Spray a small loaf pan with canola oil, dumb the pasta mixture, and sprinkle the top with the other half of your breadcrumbs. Bake in the oven for 20 minutes.
