Bean and Macaroni Salad

This salad was a lovely creation made for our labor day picnic at Central Park. I sort of mixed whatever I had at home and luckily it turned out great πŸ™‚ Callie on the other hand put a lot more thought into what she was bringing for us, because her Chocolate Chip Zucchini Bread was outstanding. You can find the recipe for it on her blog:


1 plus 1/2 cups of dry macaroni or any kind of pasta (cook it according to the box)

1 plus 1/3 cup of pinto beans

1 cup black eyed peas

1/2 cup corn

2 medium sized tomatoes

1/3 cup green olives

For the sauce:

3 tablespoons mayo

1/2 tablespoon dijon mustard

2 tablespoons olive oil

1 teaspoon apple cider vinegar

2 tablespoons non-fat plain yogurt

1/2 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon salt

Mix all the ingredients and then add the sauce to it. It’s pretty straight forward πŸ™‚ Believe me it comes out really good.
